Ingredients
  1. 2 lbs. chicken thighs, bone in, skin on
  2. 1 tsp. olive oil
  3. 3 to 4 sweet potatoes, sliced
  4. 4 shallots, sliced
  5. 4 garlic cloves, minced
  6. Fresh tarragon sprig
  7. Sea salt and freshly ground black pepper
Ingredients for the vinaigrette
  1. 3 tbsp. olive oil
  2. 2 tbsp. red wine vinegar
  3. 2 tsp. Dijon mustard
  4. 2 tsp. Italian seasoning
  5. Sea salt and freshly ground black pepper
Instructions
  1. Preheat your oven to 375 F.
  2. Season each chicken thigh with minced garlic, sea salt, and freshly ground black pepper.
  3. Arrange the sliced sweet potatoes at the bottom of a baking dish and cover with the sliced shallots. Season to taste with sea salt and black pepper.
  4. Place the chicken thighs, skin side up, on top of the shallots.
  5. In a bow,l combine all the ingredient for the herb vinaigrette.
  6. Drizzle the vinaigrette all over the baking dish.
  7. Place some fresh tarragon sprigs over the chicken.
  8. Bake in the oven for 45 to 50 minutes.
