Chocolate Crinkle Cookies

There’s never going to come a time when I don’t occasionally crave chocolate. It’s just something I’ve come to accept (and, frankly, enjoy) about myself. And these Chocolate Crinkle Cookies are a great way to get a little chocolate while still keeping Paleo.Chocolate Crinkle Cookies

These cookies are super simple to make and the ingredients should be readily available at your local grocery store. Just make sure when you buy the desiccated coconut that it doesn’t have sugar added! Not only will that kill the Paleo-ness of the cookies, they’ll be far too sweet (is there such a thing? Actually, yes!)
Once you’ve balled up the dough, rolled it in coconut flour and coconut sugar, popped them in the oven for a few minutes, and then let them cool, you’ll be left with delectable little chocolate-coconut treats. They’re soft and chewy on the chocolately inside and crisp on the outside, with little crevices of yumminess.Chocolate Crinkle Cookies

When I first started eating Paleo I thought I’d never see chocolate – or really any sweets – ever again. Not only was that incorrect, it was unrealistic. And if there’s one thing I’ve realized over the years is that any diet that is unrealistic for me is, well, unrealistic. I won’t stick with it.Chocolate Crinkle Cookies

And that’s why I love Paleo. I never feel like I’m missing out or not enjoying food to the fullest or restricting myself. These chocolate Crinkle cookies are the perfect example. Instead of using wheat flour and white sugar, these cookies use coconut flour and honey. And that’s what keeps them squarely in the Paleo camp!

But you’ll never take a bite of these cookies and think you’re missing out on a “real” cookie or “real” chocolate – that’s because it is a real cookie with real chocolate! In fact, the cocoa powder is a far more Paleo-friendly version of chocolate than your store bought chocolate chips. It’s dairy free and, aside from being ground up into a powder, it’s the least processed kind of chocolate you’re going to find in the average grocery store.

How do I enjoy these cookies (I mean, other than fresh out of the oven…)? Well, they’re great to bring to a party, especially around the holidays, but I also love to fill little red bags with 3 or 4 cookies each and pass them out at work on Valentine’s Day. Everyone deserves a little chocolate on Valentine’s Day! But for me, I like a cup of tea and two cookies.

It’s the perfect after-dinner treat and curbs those pesky chocolate cravings and reminds me that eating Paleo isn’t about giving anything up – it’s about enjoying real food in real ways every day.

  1. 1/8 cup desiccated coconut
  2. 3/8 cup cocoa powder
  3. ½ cup coconut flour
  4. ½ tsp baking powder
  5. 1/8 cup coconut sugar
  6. ¼ cup honey
  7. 1 egg
  8. ¼ cup melted coconut oil
  9. ¼ tsp salt
  10. 1 tsp pure vanilla extract
  11. For rolling:;
  12. 2 tbsp coconut flour
  13. 1 tbsp coconut sugar
  1. Preheat oven to 350 F. Line a baking sheet with baking mat or parchment paper. Set aside.
  2. In a large bowl mix the coconut flour, cocoa powder, baking powder, salt and desiccated coconut.
  3. Add the egg, melted coconut oil, honey, vanilla extract and sugar and beat with electric mixer for 5 minutes. Let it stand for 10 minutes and beat again for a minute. Refrigerate the cookie dough for 30-40 minutes or until harden.
  4. Shape dough into 1-inch balls and roll in coconut mixture to coat.
  5. Place the cookies about 2 inches apart on prepared baking sheet.
  6. Bake for 10-12 minutes or until cookies are crackled and puffed.
  7. Remove from the oven and let cool completely.
  8. Store them in a metal tin at room temperature. Serve the next day.
