Almond flour is one of my very favorite grain-free flours to work with, for many reasons. It has a fantastic flavor that’s slightly sweet but also fairly neutral, which means it works well for both sweet and savory recipes. It’s high in protein, making it nutritionally rich. It holds moisture well, but doesn’t add or subtract it dramatically, so it’s easy to work with. Best of all, it holds together fairly will with the right ingredients, so I love it in cakes and cookies.
