Sweet Potato Ice Cream

Serves: 4
 1/8 teaspoon salt
1/8 teaspoon nutmeg
1 teaspoon vanilla essence

 2 tablespoon cinnamon
2 egg yolks
 1 tablespoon maple syrup
1 can full-fat coconut milk
 1 peeled, baked sweet potato

 1. Freeze ice cream attachment overnight
 2. Puree coconut milk with sweet potato in a blender
 3. Blend in remaining ingredients
4. Cover bowl in plastic wrap and freeze two hours
 5. Put mixture into ice cream maker and churn half an hour.

Cooking Tips:Mix dry ingredients together before blending in to sweet potato and milk Variation: Replace maple syrup with honey Use 2 bananas in place of sweet potato
